Fancy making something super yummy and haven’t got much time? Forget the banana bread that takes 50 minutes to cook (although that is worth finding time to make).
4-Step Banana Muffins…
I promise they won’t disappoint and they are as short and simple as this blog post!
3 large bananas (ripe)
120g caster sugar
1 egg (beaten)
1 tsp. vanilla extract
1 tsp. baking powder
1 tsp. bicarbonate of soda
240g plain flour
70g melted butter
Pinch of salt
– Preheat the oven to 180° fan and line a muffin tray with medium size paper cases.
– Mash the bananas in a bowl until mostly smooth, then add the beaten egg, vanilla extract and sugar. Mix well.
– Add in the melted butter and afterwards stir in the dry ingredients.
– Spoon the mixture into the muffin cases and bake for 20 minutes until golden on top and a skewer comes out clean.
